Sesame rice crackers, known in Vietnamese as bánh tráng mè or bánh đa vừng, are a nostalgic childhood snack for many Vietnamese. These thick crackers, speckled with black sesame seeds, are traditionally sun-dried on bamboo racks under the crisp sunshine of Xuyen Moc, near Ho Tram. That bright sunshine lingers quietly within each cracker until it is toasted over glowing charcoal.
